Parmesan Pea Puree

A delicious dip that's not hummus or guacamole.


2 tablespoons sugar

2 cups fresh or frozen peas

3 cloves minced garlic

1/4 cup grated Parmesan cheese

1/2 teaspoon salt

2 tablespoons butter, softened

3 tablespoons sour cream

3 red bell peppers, cut into strips (or whatever else you want to dip).

      The Recipe

Fill a small saucepan halfway with water.  Bring to a boil and add sugar.  Add peas and boil for ten minutes.  Drain peas and place in food processor.  Add garlic, Parmesan, salt, butter and sour cream.  Process on high until smooth.  I like to serve it with strips of red bell pepper, but you can also put out pretzels or tortilla chips or carrots..  Makes 2 cups.
