Shrimp with Pastis

A unique and impressive appetizer in about 3 1/2 minutes.


2 tablespoons olive oil

4 cloves garlic, minced

1 1/2 pounds large green shrimp, peeled and deveined (about 25)

1 tablespoon cilantro paste (or 2 tablespoons chopped fresh or 1 teaspoon dried)

1/2 teaspoon salt

3 tablespoons orange juice

1/4 cup Pastis

      The Recipe

Heat oil in a medium skillet.  Add garlic and cook, stirring, 10 seconds.  Add shrimp, cilantro, salt and orange juice and cook about a minute, or until juices are almost gone.  Add Pastis and cook another 30 seconds on medium-high or until liquid is reduced.  Best served warm or room temperature.  Serves about 8 as an appetizer
