Caprese Salad on a Stick

Simple, refreshing and a hit at parties.


About 30 bite-sized fresh Mozzarella balls

1/2 cup olive oil

Juice of 1/2 lemon

3 - 4 cloves of minced garlic

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon pepper

About 40 cherry or grape tomatoes

About 20 fresh basil leaves

About 20 five-inch wooden skewers

      The Recipe

Place Mozzarella balls in a medium bowl.  Add to the bowl the olive oil, lemon, garlic, oregano, salt and pepper.  Toss gently (you can marinate for an hour or two if you like).

Skewer one tomato, one Mozzarella ball, a basil leaf, another tomato and another cheese ball.  Repeat until all are done.  Makes about 20.  Note:  Best served at room temperature, or you can refrigerate up to a couple of hours, if you must.
