Radish Butter with Anchovies
Three ingredients for a delicious spread, especially on pumpernickel.
12 - 14 radishes, ends trimmed and dried with paper towels
1 stick butter, room temperature
1 tablespoon anchovy paste
Party-sized pumpernickel rye bread
Salt to taste
Chop radishes in a food processor until fine. Add butter and anchovy paste and blend well. Spread on rye bread and sprinkle with a little salt, if desired. Serves 6 - 8.
