6 Ways to Jazz Up Your Store-Bought Pumpkin Pie
          

EASY AND DELICIOUS WAYS TO EMBELLISH A PLAIN OLD PUMPKIN PIE:

 

PUMPKIN-PECAN PIE WITH BOURBON WHIPPED CREAM

In a small skillet, melt 4 tablespoons butter.  Saute 1 cup pecans until lightly browned.  Add 2 tablespoons brown sugar, cook, stirring 30 seconds.  While warm, spoon on top of pie.  Serve with 1 cup whipped heavy cream, adding 1 tablespoon sugar and 2 tablespoons bourbon towards the end of whipping.

 

BANANA SOUR CREAM PUMPKIN PIE

Slice 3 bananas into 1/4" rounds.  Arrange on top of pie.  Mix together 8 ounces of sour cream, 1/4 cup sugar and 1 teaspoon vanilla or banana extract.  Spread on pie.  Garnish top with more banana slices that have been tossed with a little lemon juice to prevent them from browning.

 

CHOCOLATE-COVERED MARSHMALLOW PUMPKIN PIE

Spread a 7-ounce jar of marshmallow fluff on top of pie.  Melt 6 ounces of semi-sweet chocolate chips in double boiler or microwave.  Allow to slightly cool.  Spoon plops of chocolate on top of marshmallow and carefully with knife to frost pie.  Score the chocolate into pie slice pieces for easier cutting.  Allow chocolate to set.

 

MASCARPONE-PEACH PUMPKIN PIE

Mix together 1 1/2 cups room temperature mascarpone cheese, 1/4 cup milk and 1/2 cup peach jam.  Spread on pie.

 

PUMPKIN PIE WITH BUTTERSCOTCH-BRICKLE WHIPPED CREAM

Whip 1 1/2 cups heavy cream with electric mixer until soft peaks form.  Add 2 tablespoons butterscotch schnapps and 1 tablespoon sugar.  Continue whipping until stiff peaks form.  By hand, fold in 1/2 cup brickle bits.  Spread on top of pie or serve on the side.

 

GINGER CREAM CHEESE PUMPKIN PIE

Mix together 1/4 cup finely chopped, crystallized ginger with 8 ounces softened cream cheese and 2 tablespoons milk.  Spread on top of pie.  Garnish with crushed ginger snaps.
