Grilled Chicken with Mustard-Marmalade Sauce

This sauce is fabulous on just about everything!


2 boneless, skinless chicken breast halves, cut in half horizontally


1/2 cup orange marmalade

2 tablespoons brown mustard

1/2 cup Amaretto (almond liqueur)

1/2 teaspoon salt


Brush a little  mayonnaise on both side of all four pieces of chicken (so they won't stick to the grill).  Grill for a few minutes.  Meanwhile, make sauce:  In a small saucepan, combine marmalade, mustard, Amaretto and salt.  Bring to a boil, turn down heat and simmer five minutes.

Flip chicken and brush sauce on one side.  In two minutes, flip chicken again and brush more sauce on.  Flip once more to lightly char sauce.  Remove to a serving platter and pour remaining sauce on top.  Serves 4.
