A mixture of savory spices, seared onto pieces of chicken, then simmered in white wine.
4 - 6 chicken pieces
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder (or granulated garlic)
1 teaspoon salt
2 cups white wine
In a shallow dish, mix together all the spices. Coat chicken pieces in spice mixture and brown in hot olive oil in a large skillet, turning once. Pour wine over, cover, reduce heat and simmer for 20 - 30 minutes, depending on the size and thickness of chicken pieces. Serves 4 - 6. Suggestion: Use the liquid in the pan to pour over rice.
