Buffalo Chicken Salad Sandwich

Wings, without the bones.


 Boneless, skinless chicken breast halves
Low-fat mayonnaise

Diced celery

Crumbled Blue Cheese 
Your favorite hot sauce
A loaf of good Italian bread, uncut


Figure one chicken breast half her person. Place chicken in appropriate sized pot. Cover with water, bring to a boil, lower heat and simmer for 25 minutes or until cooked through. Drain and rinse in cold water to bring temperature down. Allow to cool (putting chicken in the fridge will speed things up).
In a large bowl, break chicken up into shreds with your hands. Add enough mayonnaise to moisten. Mix in celery and blue cheese.  Stir in hot sauce to your desired level of heat. Add salt to taste.
Slice bread into nice thick slices and assemble sandwich.
