Chicken Fritatasomalisopotis

Don't worry, it's not a complicated recipe - I just made up that meaningless name for fun. Warmed flour tortillas filled with tasty chicken. A touch of Mexico for a casual dinner.


Ingredients:

4 boneless, skinless chicken breast halves
Juice from 2 lemons
3 cloves garlic, crushed
1 tablespoon red pepper flakes
Salt and pepper
1 tomato, chopped
Flour tortillas


Recipe:

Cut chicken into bite-sized pieces. Place in bowl along with lemon juice, garlic, red pepper flakes and a sprinkling of salt and pepper. Let marinate 30 minutes.
Heat a little olive oil in a skillet and saute chicken, marinade and all, until done. Stir in tomato and cook 1 minute more. Mixture should be nice and moist but not drippy (drain off excess liquid if you have to). Serve mixture rolled up in flour tortillas that have been warmed and softened in the oven.
Options: I like them just as is, but you can add shredded cheddar cheese and/or salsa before rolling up for even more of a Mexican taste. They go well with a side of rice and beans.
