1 cup milk
2 teaspoons salt
1 teaspoon pepper
4 - 6 bone-in, skin-on split chicken breasts
3 cups peanut oil
1 cup flour
In a large bowl, whisk together eggs, milk, salt and pepper. Place chicken breasts in mixture and let marinate at room temperature about 20 minutes, turning occasionally (may also be marinated in refrigerator overnight).
Heat peanut oil in a large, deep skillet. Coat each piece of chicken in flour and fry, meaty side down, 2 or 3 at a time, for 15 minutes. Turn with tongs and fry 5 - 7 minutes more. Keep warm in oven until all are done. Eat with hands! Serves 4 - 6.
