Caribbean Fire & Lime Chicken Fingers

Only 4 ingredients!  Tenderloins of chicken roasted in garlic, lime and cayenne.


2 pounds chicken tenderloins

3 limes (plus 1 for garnish)

3 cloves garlic, crushed

1 teaspoon cayenne pepper (or more if preferred)


Preheat oven to broil.  Arrange chicken fingers in a single layer in a roasting pan.  Drizzle with olive oil and season with salt.  Grate lime zest into a small bowl.  Sqeeze juice into bowl.  Stir in garlic and drizzle over chicken.  Top with a sprinkling of cayenne.  

Broil about 15 minutes without turning, or until golden brown on top.  Transfer to serving platter and garnish with lime wedges.  Serves 6.
