A medley of warm spices seared onto grilled chicken wings and topped with a soothing tomato butter spread.
3 tablespoons chili powder
2 tablespoons ground cumin
1 tablespoon cayenne pepper
1 tablespoon granulated garlic
2 tablespoons salt
3 dozen chicken wings
4 tablespoons butter, softened
2 tablespoons tomato paste
In a medium bowl, mix together chili powder, cumin, cayenne, granulated garlic and salt. Remove one tablespoon of the spice mixture to another small bowl.
Place wings on grill and generously sprinkle spice mixture on top. Flip, and season the second side. Allow spices to sear on the wings, then flip and grill until done.
Meanwhile, mix butter and tomato paste with the reserved spices.
Transfer wings to a platter and immediately smear with butter. Serves 4 - 6.
