Peach Bellini Chicken Wings

Grilled wings with a sweet and spicy sauce.


5 pounds chicken wings

1 tablespoon EACH salt and pepper

12 ounce jar of peach preserves

2 cups Prosecco (sparkling wine)

Juice of 2 limes (or 1 lemon)

1/4 - 1/3 cup hot sauce

1 peach, diced


Preheat grill.  Salt and pepper wings and put on grill.  

Meanwhile, in a medium saucepan, melt peach preserves along with Prosecco, lime juice and hot sauce.  Bring to a boil, turn heat down to medium and cook until sauce is reduced by 1/3 (about ten minutes).  Remove from heat and stir in diced peach.

Flip wings to grill the second side.  When wings are cooked through (about twenty minutes total), transfer to a large platter and top with sauce.  Serves a small crowd.
