Indian-Spiced Cauliflower Steak

Oven-roasted with the perfect Yogurt-Mango Chutney Sauce.


Ingredients:

1 large cauliflower

Olive oil

2 tablespoons garam masala (Indian spice mixture)

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon tumeric

1 1/2 teaspoons salt

1 cup plain yogurt

1/2 cup jarred mango (or other flavored) chutney


Recipe:

Preheat oven to 400 degrees F.

Trim leaves off cauliflower and discard (keep the stem in tact).  Cut it straight down the middle, then slice it into 1 - 1 1/2" 'steaks'.  You'll get two large steaks and some smaller ones.  Place on a baking sheet with sides and brush both sides with olive oil.  Cover tightly with heavy foil and bake 8 -10 minutes.

Meanwhile, make spice mixture:  In a small bowl, combine garam masala, chili powder, cumin, tumeric and salt.

Remove foil from pan and sprinkle half of the spice mixture on the cauliflower steaks.  Roast 15 minutes.  Remove from oven, flip each piece and sprinkle on remaining spices.  Return to oven for another 10 - 15 minutes.

Meanwhile, make sauce:  In a small bowl, mix together yogurt and chutney.  

To serve:  Place 'steak(s) on a dinner plate and top with a big dollop of sauce.  Serves 3.  Note:  Reheat leftovers in a hot oven, uncovered (not the microwave).
