Peaches baked in cinnamon and spiced rum and topped with tons of brown-sugar oatmeal crumble (my favorite part).
6 - 7 large, ripe peaches
1/2 lemon
2 tablespoons spiced rum (or brandy)
1 teaspoon ground cinnamon
2 teaspoons sugar
For crumble:
1 1/4 cups flour
3/4 cup brown sugar
1/2 cup (1 stick) cold, sweet butter, cut into small pieces
1 cup quick-cooking oats (not instant)
Freshly whipped, sweetened whipped cream
Preheat oven to 375 degrees F.
Slice peaches and place in a baking dish. Squeeze lemon over, pour on rum, then sprinkle on cinnamon and sugar.
Make crumble: Mix flour and brown sugar in a medium bowl. Add butter pieces and work to coat with hands. Mix in oatmeal. Arrange on top of peaches. Bake 25 - 35 minutes, or until crumble is golden. Serve topped with whipped cream. Serves 6 - 8.
