Just playing in the kitchen...
1 cup butter (2 sticks), room temperature
3/4 cup packed brown sugar
3/4 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
2 1/3 cups flour
1/2 teaspoon baking soda
1 cup butterscotch chips
1 cup coarsely crushed potato chips
Preheat oven to 350 degrees F. (I use the convection bake). Butter two baking pans.
In a food processor, cream together butter and both sugars. Mix in eggs and vanilla extract. Combine flour and baking soda and add to mixture in two batches. Remove batter to a large bowl. Stir in butterscotch morsels and carefully fold in potato chips.
Place a rounded teaspoon's worth of batter on baking sheets, about 1 1/2" apart. Bake 12 - 14, minutes, or until lightly golden (if centers are a littlel soft, it's ok, because they'll firm up as the cookie cools - you want them crunchy on the outside and tender on the inside). Makes 4 dozen.
