Cheese Ravioli with Meat Sauce

Such a simple meat sauce, and yet my husband insisted I share this recipe.


1 1/2 lbs. lean ground sirloin
8 cloves garlic, minced
2 tablespoons flour
2 cups+ white wine (I use cheap dry white vermouth)
3 tablespoons tomato paste
salt and pepper to taste
1 lb. cooked ravioli


In a large skillet, brown ground sirloin in a little olive oil along with minced garlic. Sprinkle flour over and cook, stirring, 1 or 2 minutes until flour is incorporated. Add wine and tomato paste and simmer about 10 minutes until a nice sauce forms. More wine may be added for a thinner sauce. Season to taste with salt and pepper. Spoon over cooked ravioli.
Options: Grate Parmesan cheese over pasta before serving and decorate plate with tomato wedges.
