ESPRESSO GLAZED HAM STEAKS

This is a very different way to fry up ham steaks - the combination of espresso and brown sugar is a delicious complement to salty ham.


Ingredients:

2 ham steaks (1/3" to 1/2" thick)
Rum (dark or light)
2 tablespoons instant espresso from a jar
3 tablespoons brown sugar


Recipe:

In a pie plate or deep dish, soak ham steaks in a couple of hearty splashes of rum for 20 minutes.
Drizzle olive oil in a large skillet along with a pat of butter for flavor. Fry one side of the ham steaks until brown. While the one side is frying, combine espresso and brown sugar in a small bowl and sprinkle top of ham steaks with half of it. Flip ham steaks so espresso mixture sears onto the ham. Repeat to coat other side. They'll have a blackened look when done.  Serves 2 – 4.
Serving suggestion: Serve with warmed applesauce and steamed broccoli.
Another suggestion: Have someone else clean the skillet!
