Broiled pork chops with a Mustard-Parmesan crust (and a funny name).
4 thick-cut pork chops
3 heaping tablespoons Grey Poupon mustard (no seeds)
4 tablespoons dry bread crumbs
4 tablespoons grated Parmesan cheese
2 teaspoons dried tarragon
Salt to taste
Preheat oven to broil. Broil pork chops until done, turning once (you can cook these on a grill, too).
Meanwhile, in a small bowl, mix together mustard, bread crumbs, Parmesan, tarragon and salt.
Remove pork chops from oven. Top each chop with a thick layer of the mustard mixture. Put back under broiler until cheese melts and tops are golden brown. Serves 4.
