Spanish Steak Sofrito

Grilled steak smothered in a pureed vegetable sauce.


4 steaks

1 medium onion, peeled and chunked

1 red bell pepper, cleaned and chunked

2 medium tomatoes, chunked

4 cloves garlic, peeled

1/3 cup fresh cilantro leaves

1/2 teaspoon salt

1/4 teaspoon cayenne pepper

About 1/4 cup olive oil


Season steaks with a little salt and pepper and grill/broil to your liking.

Meanwhile, place onion, bell pepper, tomato, garlic, cilantro and salt and pepper in a food processor.  Puree until smooth.  Heat olive oil in a small skillet, add sofrito mixture and let simmer 5 minutes.  Spoon on top of steaks.  Note:  Any leftover sofrito can be splashed on eggs, in rice, on poultry or fish..
