A great dive bar on the remote side of St. John in the U.S. Virgin Islands (featured twice in Esquire Magazine as one of the top 100 bars in the U.S.) shares their recipes for their award-winning burger and cocktail.
For a Skinny Legs Guava Killer Cocktail (per drink):
1/4 cup EACH guava rum and dark rum
1 tablespoon Coco Lopez (coconut cream)
1/4 cup EACH pineapple juice and orange juice
Freshly grated nutmeg
For Skinny Leg's Cheddar Cheese Mousse Burger with Bacon:
1 1/3 pounds fresh ground chuck or sirloin
8 strips bacon
Mousse:
1 cup heavy cream
2 cups shredded Cheddar cheese
1 teaspoon lime juice
1 teaspoon salt
1/2 teaspoon pepper
4 good hamburger buns
Tomato slices, pickles or other garnishes
For the Skinny Leg's Guava Killer Cocktail:
Fill a pint glass (or martini shaker) with ice. Add both rums, coconut cream and juices. Put top on and shake. Top with grated nutmeg.
For the Skinny Leg's Cheddar Cheese Mousse Burger with Bacon:
Pat ground beef into 4 patties. Fry or grill until desired doneness.
Fry bacon until crisp.
Make mousse: In a medium saucepan, place cream, shredded Cheddar, lime juice and salt and pepper. Heat slowly, stirring constantly, until the cheese melts. Do not boil. Place pan in a big bowl filled with ice. Using an immersion blender or electric mixer, whip into a mousse consistancy.
Place burger on bun, top with mousse, then bacon, then whatever condiments you desire. Serves 4.
