A pepper-crusted Boston Strip topped with a perfect compound butter.
2 Boston Strip steaks
2 teaspoons coarse sea salt
2 tablespoons black pepper
2 teaspoons sugar
4 tablespoons butter, softened
2 teaspoons tomato paste
2 cloves minced garlic
5 - 6 drops Liquid Smoke
Sprinkle salt, pepper and sugar on each side of both steaks. Place on grill, and cook, turning once.
Meanwhile, make compound butter. In a small bowl, mash together butter, tomato paste, garlic and Liquid Smoke.
As soon as the steak comes off the grill, put a big dollop of smoked butter on top. Serves 2 - 4. Note: This compound butter is also excellent on grilled vegetables.
