Silence of the Lamb Chops

Almond-Walnut Crusted Lamb Chops fried in butter and finished off in white wine.  Oh, and a kinda weird video..


1/2 cup almonds (I like whole blanched)

2/3 cup walnuts

2/3 cup Panko bread crumbs

1/2 cup flour

1 tablespoon dried tarragon

3 eggs

1 tablespoon brown mustard

8 tablespoons butter (1 stick) + 2 tablespoons olive oil

12 loin lamb chops

2/3 cup white wine

Salt and pepper to taste


In a food processor, chop almonds and walnuts.  Place in medium bowl along with Panko bread crumbs.  In another bowl, mix together flour with tarragon.  In a third bowl, beat eggs with mustard.

In a large skillet, heat butter and oil.  Dip lamb chops first in the flour mixture, then egg mixture, then nut mixture.  Over medium heat, fry each side until golden brown.  Add wine, cover, turn heat to low and let simmer 10 - 15 minutes.  Season with salt and pepper.  Serves 4.
