Pork loin ribs oven-poached in apple cider vinegar and white wine and finished off with apple butter barbecue sauce.
1 1/2 slabs ribs (about 3 pounds)
1/2 cup apple cider vinegar
1/2 cup white wine
1 1/2 cups jarred apple butter
1/2 cup ketchup
1/4 cup Worchestershire sauce
2 teaspoons pepper
1 teaspoon salt
Preheat oven to 375 degrees F. In large pan, arrange ribs in a single layer. Pour vinegar and wine over, cover with heavy foil and bake one hour.
Make sauce: In a medium saucepan, combine apple butter, ketchup, Worchestershire sauce, pepper and salt. Bring to a boil and simmer five minutes.
Grill ribs, brushing sauce on both sides and turning several times so you can a nice sear on the ribs. When lightly blackened, they're ready to serve. Serves 6 - 8.
