Endive Salad with Figs and Almonds

Crunchy endive with fresh sweet figs and toasted almonds.
 People have been enjoying figs since 5,000 BC and they were a favorite of Cleopatra. They’re the most talked about fruit in the Bible. Figs are fat-free, sodium-free, cholesterol-free; and contain more dietary fiber and more minerals than any other fruit. Try them in this salad!


Ingredients:

1 cup slivered almonds
6 heads Belgian endive lettuce*
1 tomato, diced
1/2 cup grated Parmesan cheese
6-8 fresh figs
Your favorite Italian dressing


Recipe:

In a small skillet, sauté almond slivers in a pat of butter until browned. Lightly salt. Set aside to cool.
Trim bottoms off endive and slice in half lengthwise. Rinse and cut into long slivers. Arrange on large platter or individual salad plates.
Sprinkle diced tomato on top, followed by the Parmesan cheese. Slice figs into slivers and arrange on top. Drizzle salad with Italian dressing. Finally, sprinkle the toasted almonds on top. Serves 4.
*Belgian endive are small, cone-shaped heads of lettuce.
