Green Salad With Tuna Dressing

 Sometimes, making a salad can be time-consuming because of all the chopping. This is just plain greens, dressed with a delicious tuna-lime-cilantro dressing.


Ingredients:

About 6 cups worth of your favorite salad greens (I like a mix of Boston and bib)
1 six-ounce can solid white albacore tuna in water
Juice of 1 lime
1/4 cup of fresh cilantro leaves
1/4 teaspoon each salt and pepper
Olive oil (about 1/3 to 1/2 cup)


Recipe:

Wash greens, wrap in a tea towel and chill. In a food processor or blender, combine tuna (water and all), lime juice, cilantro and salt and pepper. Blend until smooth. With motor running, drizzle in olive oil until dressing is creamy. Arrange greens on individual plates, Spoon dressing over. Serves 4. Option: Add a few tomato wedges is you want more color.
Notes: The tuna dressing can also be spooned over grilled salmon, or mixed into chopped hard-boiled eggs for an interesting egg salad sandwich - or as a dressing for potato salad.
