For those sweltering summer days when you don't feel much like cooking.
2 English cucumbers (semi-seedless), sliced thin
1 medium red onion, coarsely chopped
1/2 cup apple cider vinegar
3 tablespoons apple juice concentrate
1/2 teaspoon sugar
1 teaspoon coarse pepper
Place cucumbers and onion in a salad bowl. In a small bowl, whisk together cider vinegar, apple juice concentrate, salt and pepper. Pour over vegetables and toss. Cover and refrigerate one hour (if it stays in the refrigerator over two hours, the cucumbers will soften slightly, but it'll still taste great). Toss again just before serving. Serves 4 - 6.
