Red White and Blue Chili

A patriotic take on an American classic featuring red tomatoes, white cannellini beans and blue cheese.


1 large onion, chopped

1 1/2 pounds ground sirloin (ground turkey works well, too)

3 large cans diced tomatoes, juice and all

1 small can tomato paste

4 tablespoons chili powder, or to taste

3 cans cannellini beans, drained and rinsed

1/2 cup crumbled blue cheese (I like Danish)


In a large soup pot, saute onions in a little olive oil until tender and slightly golden.  Add meat and cook, stirring, until meat is almost cooked through.  Add diced tomatoes, tomato paste and chili powder.  Bring to a boil, lower heat and simmer 30 minutes.  Add beans and blue cheese and heat through until cheese melts.
