Carrot Soup with Cloves

Healthy, colorful and enhanced with cloves and orange juice.  Only 5 ingredients.


2 pounds baby carrots

1 cup orange juice

1 1/2 cups vegetable stock

1/4 teaspoon ground cloves

Salt and pepper to taste

Splash of cream


Place carrots in a large saucepan and cover with water.  Boil until very tender, about 20 minutes.  Drain, return to pan and puree with a hand mixer.  Add orange juice, stock, cloves and salt and pepper.  Bring to a boil and let simmer 10 minutes.  Add a splash of cream and serve.  Serves 4 - 6.
