Live from a stunning manor house in Northern Portugal - a very traditional stew.
3/4 cup flour
1 tablespoon pepper
2 tablespoons coarse salt
1 1/2 tablespoons ground cumin
4 pounds boneless pork loin, cut into bite-sized pieces
1/2 cup extra virgin olive oil
5 - 6 cloves of garlic, smashed and chopped
1 bottle white wine
2 cups water
4 pounds potatoes, peeled and chunked
Juice of 1 - 2 lemons
In a large bowl, combine flour, pepper, salt and cumin. Place pork pieces in flour mixture and toss to coat. Heat olive oil in a large soup pot and brown pork. Add garlic and stir one minute. Pour wine and water in, and bring to a boil. Add potatoes, bring back to a boil, lower heat, cover and simmer 45 minutes.
Remove cover, increase heat and cook off some of the liquid, about 10 - 15 minutes. Remove from heat and pour lemon over. Serves 8 - 10.
