The Perfect Scottish Breakfast

From a 200 acre farm overlooking Loch Ness, a full traditional breakfast (includes a recipe for potato scones).

Here's what was on our plates:

Fried egg, Canadian-style bacon, lightly fried in butter plum tomato, fried pork sausage links, black pudding (aka blood sausage), clootie dumpling (like a lightly fried thin slice of fruitcake), potato scone (recipe below), toast with marmelade.  You can also have Scottish smoked salmon with scrambled eggs made with double cream and salt with lemon garnish.  And, of course, tea (or coffee).

For the Scottish scones (flat potato cakes):

1 pound Russett-style potatoes, peeled, cooked and mashed

2 tablespoons butter

1/2 teaspoon salt

1 teaspoon sugar

1 egg

1/2 cup flour

1 teaspoon baking powder


Recipe:

In a medium bowl, mix together mashed potatoes with all ingredients.  On a floured surface, roll out to 1/2" thickness.  Cut into four wedges and fry in butter five minutes on each side, or until golden.  Serves 4.
