Completely decadent warm potato chips blanketed with a creamy blue cheese sauce.
1 large bag potato chips
4 tablespoons butter
1/2 cup flour
1 1/2 cups milk (any kind - regular, 2%, skim)
1 1/2 cups Danish blue cheese, divided
Preheat oven to 400 degrees. Fill a baking pan with potato chips.
In medium saucepan over low heat, melt butter. Add flour and cook, stirring for one minute. Slowly pour in milk and cook, stirring until thickened, about 3 minutes. Crumble about 1 cup of blue cheese into flour mixture and cook until cheese melts. Pour cheese mixture all over potato chips. Crumble another 1/2 cup cheese on top. Bake 15 minutes, or until cheese is bubbly and chips are browned. Serve immediately, right from the pan.
