Stuffed Kumquats with Ginger Cream Cheese

Elegant taste treats topped with chocolate walnuts.


1/2 cup semi-sweet chocolate chips

1/2 cup walnut pieces (quarters)

1 package (8 ounces) cream cheese, softened

1 teaspoon ground cinnamon

2 - 3 tablespoons finely chopped crystallized ginger

About 18 kumquats, fresh or preserved in syrup or a combination


In a double boiler over hot but not boiling water (or in the microwave), melt chocolate.  Stir in walnut pieces to coat.  Place each piece on waxed paper to dry.


In a medium bowl, place cream cheese, cinnamon and ginger and mix throughly.  Slice kumquats in half lengthwise (remove centers of fresh ones).  Stuff each kumquat with cream cheese mixture and top with chocolate walnut.  Store in refrigerator.  Makes about 36.
