Atomic Meatballs

Triple pepper square meatballs that will light up your mouth.  Serve with Sweet & Sour Tomato Chaser.


4 slices cheap white bread

3 pounds lean ground beef sirloin

1/3 cup finely chopped onion

2 eggs

2 teaspoons ground white pepper

2 teaspoons black pepper

2 1/2 teaspoons cayenne pepper

1 1/2 teaspoons salt

For the Sweet & Sour Tomato Chaser:

1 can diced tomatoes, juice and all

Juice of 1/2 lemon

1 tablespoon brown sugar

2 tablespoons sour cream

1/2 teaspoon salt


Preheat oven to 375 degrees.  In a small bowl, soak bread slices in a little water for a minute, then squeeze dry and place in a large bowl.  Add ground sirloin, onion, eggs, the peppers and salt.  Mix with hands.  Press into a 9" x 13" roasting pan and bake 45 minutes.

Meanwhile, make sweet and sour tomato dip:  Place all ingredients in a food processor and blend.  Pour into small bowl.

Allow meat to cool ten minutes before cutting into bite-sized squares.  Arrange on platter and serve with dipping sauce and toothpicks.  Meatballs may be warmed in oven or microwave just before serving.
