In the islands, where we use lemons, they use limes. On everything! These tasty grilled strips of chicken feature lots of lime zest and just enough cayenne to leave a nice, warm feeling. This is party food - no silverware needed.
4 pounds chicken tenders
3 - 4 limes
1 tablespoon cayenne pepper
Arrange chicken in a roasting pan. Drizzle with a little olive oil and season with salt (I like to use coarse sea salt). With a good, sharp grater or zester, grate the green skin off the limes into a small bowl. In the same bowl, add the juice from the limes. Sprinkle zest and juice over chicken. Season evenly with cayenne pepper.
Cover chicken and marinate from 1 hour to overnight. You can either cook the strips on the grill, or broil in the oven, turning once. Serves about a dozen partygoers.
