Stuffed Figs on the Grill

Dried figs, stuffed with creamy Buffalo Mozzarella, wrapped in Prosciutto and grilled until crispy.


For 3 servings (2 stuffed figs each):

6 short (4" - 5") wooden skewers

12 dried figs

12 pieces (1/2") fresh, Buffalo Mozzarella

6 thin slices Prosciutto


Soak the skewers in water for a few minutes so they won't blacken on the grill.

With a small, sharp knife, slice figs in half, but not all the way through, so you have two connected 'discs' (if your knife gets sticky, dip it in warm water.)  Stuff each fig with Mozzarella and wrap in Prosciutto.  Thread two on each skewer.

Grill over a medium heat, turning until Prosciutto is brown and crispy.  Eat immediately.

Note:  This recipe is also good for a crowd.  Prepare ahead of time, refrigerate, and grill just before serving.
