I love bagels. I love pesto. I love shrimp. Put them all together and you have a tasty, eat-with-your-hands hearty appetizer.
4 freshly baked sesame bagels
1 small jar prepared pesto (homemade is even better)
1 - 1 1/2 lbs. cooked, medium shrimp
Slice and butter bagels. Place on baking sheet and put under the broiler until lightly browned. Spread pesto on each bagel half, then arrange shrimp in a circle on top of pesto. Place back under broiler for just a couple of minutes to warm the shrimp. Squeeze fresh lemon over before serving. Cut in quarters for appetizers, or this is perfect for dinner along with a Caesar salad. Also, this makes a good Sunday brunch.
