Super Bowl Meat and Potatoes Finger Food Mini-burgers and Guacamole Potatoes

SQUARE SLIDERS: The easiest way to make mini-burgers is to press ground sirloin in a roasting pan about 1" thick. Roast in a 375-degree oven 30 - 45 minutes until done. Cut into squares to fit on Parkerhouse or other small rolls. You can make these in advance and reheat just before serving. Serve with whatever condiments you prefer.


GUACAMOLE POTATO BITES: Wash about 3 pounds of small red potatoes and cut into halves or quarters. Arrange in large roasting pan. Drizzle with olive oil, season with salt and pepper and squeeze the juice of 2 limes over. Roast in a 450 degree oven 25 minutes or until potatoes are browned and tender. Serve in a big bowl (a super bowl) with homemade or good store-bought guacamole for dipping. No silverware necessary.


To round everything off, set out a big bowl of salted peanuts in the shell, a bowl of grapes, a plate of brownies and some beer and you've got yourself a party.
