Hunks of corn-off-the-cob dipped in a spicy mixture and fried.
Spice mixture:
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1/2 teaspoon granulated garlic
1/2 teaspoon salt
3/4 cup plain Panko bread crumbs
1/3 cup flour
2 - 3 eggs
Vegetable oil for frying
4 - 5 cobs of cold, roasted corn
In a small bowl, combine cayenne, chili powder, garlic, salt and Panko. Put flour in another small bowl, and in a third small bowl, beat eggs. Set aside.
Cut corn off the cob lenghwise, reserving the bigger pieces (the 'crumbs' can be used in a salad or corn muffins). Heat 1" vegetable oil in a large pot. Carefully dip corn pieces first in flour, then eggs, then spice mixture. Fry until golden brown. Do this in batches because it only takes a minute or two to fry. Drain on paper towels. Dust with a little more salt, if desired.
