Herb-roasted Cornish Game Hens with a Maple-Mustard-Cherry Glaze.
4 Cornish Game Hens, washed and dried
4 small, whole onions
1/4 cup olive oil
2 tablespoons dried herbs de Provence
1/3 cup spicy brown mustard
1 cup maple syrup
2 cups cherry juice
Preheat oven to 450 degrees. Arrange hens in roasting pan. Mix together olive oil and herbs and brush the tops of the hens. Season with salt and pepper. Roast 20 minutes, uncovered.
Meanwhile, in a medium saucepan, stir together mustard, maple syrup and cherry juice. Bring to a boil, reduce heat to medium and allow to reduce by half.
Remove hens from oven and reduce heat to 350 degrees. Baste hens in their own juices and return to oven for 25 minutes. Serve topped with maple glaze. Serves 4.
