A fun summer treat featuring grilled watermelon embedded with chocolate 'seeds' with a salty-spicy glaze.
For 8 servings:
8 wedges of seedless watermelon, about 1 1/2" thick
semi-sweet chocolate chips
1/2 cup honey
1 teaspoon salt
1/4 to 1/2 teaspoon cayenne pepper
Preheat grill to high.
Embed about 4 or 5 chocolate chips in each side of the watermelon piece. In a small bowl, mix together honey, salt and cayenne.
Brush each side of the watermelon piece with honey mixture and place on grill. Turn after about three minutes and grill two more minutes, or until you can see light grill marks. Serve immediately. Serves 4 - 8.
