Spicy ground sirloin topped with salsa and Mexican Chiwahwah cheese on a very long bun (serves 10-12).

Ingredients:

3 pounds lean ground sirloin

1 egg

2 teaspoons cayenne pepper

1 teaspoon salt

2 loaves French bread

1 1/2 cups salsa

1 pound Mexican Chihuahua cheese

Recipe:

Preheat oven to 375 degrees F.  In a large bowl, mix together with hands ground sirloin, cayenne and salt.  Spread evenly in a 9" x 13" pan and roast for 40 minutes, uncovered.

Meanwhile, prepare bread loaves by cutting off the two inside end pieces so they'll fit together as one long loaf.  Slice each loaf length-wise and arrange on a long cedar plank or other appropriate surface.

Remove meat from oven and switch oven to broil.  Spread salsa on top of meat and top with slices of cheese.  Broil until cheese is browned and bubbly.  Allow to cool slightly, then cut meat into 3 long strips.  Arrange on bread and serve immediately.  Serves 10-12 people.
