A boring apple pie hidden within a buttery, molasses shoofly pie.
1/2 stick (1/4 cup) cold sweet butter, chunked
1 cup flour
1/3 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
1/3 cup boiling water
1/3 cup molasses
1/2 teaspoon baking soda
2 large, Red Delicious apples, cored, peeled and diced
1 deep dish pie shell (8")
Vanilla ice cream
Preheat oven to 375 degrees F.
Make crumb mixture: Place butter, flour, brown sugar and spices in food processor and process until it resembles coarse meal.
In a large bowl, mix together boiling water and molasses. Stir in baking soda, then apples. Add about 2/3's of the crumb mixture. Place pie shell on baking sheet and pour mixture into shell. Top with remaining crumb mixture. Bake about 35 - 40 minutes, or until top is lightly browned and pie is set. Let cool completely. Serve with a scoop of vanilla ice cream. Serves 6 - 8.
