A lighter, airier version of brittle that's easy on the teeth.
2 cups sugar
1 cup light corn syrup
1 cup pistachios
1 cup salted peanuts
2 tablespoons butter
1/2 teaspoon vanilla extract
1 teaspoon baking soda
In a large, heavy saucepan, cook sugar and syrup together over medium meat, stirring, until it turns a light caramel color (this will take about 20 minutes). Stir in pistachios and peanuts. Turn off heat and mix in butter, extract and baking soda. Carefully pour onto buttered 11" x 17" baking pan with sides, spreading to distribute evenly. Allow to harden at room temperature (about an hour). Carve out the first piece with a knife, then break apart with hands. Store in a tightloy sealed container (so it doesn't get sticky). Option: When hardened, brush on melted dark chocolate and allow to set.
