Ikarians live very long, healthy lives. The most often mentioned foods they felt were partly responsible were red wine and honey - hence this delicious recipe.
2 1/2 pounds boneless, skinless chicken, chunked
5 cloves garlic, minced
2 tablespoons dried Herbs de Provence
1 teaspoon salt
2 - 2 1/2 cups red wine
3 teaspoons honey
Option: Rice
In a large skillet, saute chicken until lightly browned. Add garlic, herbs and salt and mix in. Pour wine over, bring to a boil and let cook for about ten minues, or until liquid is reduced by about half. Remove chicken to a serving platter.
Stir honey into the reduction sauce and pour over chicken. I like to serve it alongside some vegetable rice. Serves 6.
