Southern Boiled Peanuts

An addicting, healthy snack from the Southern United States.


3 pounds raw peanuts in the shell ('green' peanuts)

3/4 cup salt

2 tablespoons red pepper flakes

2 tablespoons sugar


Place peanuts in strainer pot.  Add salt, cover and let set between 12 and 24 hours at room temperature.  Drain and rinse and filll pot with fresh water.  Add pepper flakes and sugar and mix with hands.  Bring to a boil, cover, lower heat to simmer and cook 2 hours until peanuts are soft and tender.  Serves a crowd.  Store in refrigerator for up to a week.  

Notes:  This makes a huge batch, so feel free to cut down the ingredients.  Some in the South even eat the shells (but I don't).  Also, these are not very salty, but if you desire a saltier flavor, add 1/2 cup additional salt before boiling.
