Broiled walleye fillet enhanced with bacon and white wine and a delicious crust.
walleye fillet, 2 to 2 1/2 pounds
1 cup white wine, divided
1/2 teaspoon EACH salt and pepper
1 slice bacon
12 crushed Saltine crackers
1/2 cup shaved or grated Parmesan cheese
1/2 teaspoon cayenne pepper
Preheat oven to broil. Drizzle a little olive oil in the bottom of a roasting pan. Add fillet, tucking the tail under. Pour 1/2 cup of the wine over the top, season with salt and pepper and lay strip of bacon on top. Broil 15 minutes. Meanwhile, in a small bowl, mix together Saltines, Parmesan and cayenne.
Remove fish from broiler, rub bacon all over and top with the Saltine mixture. Drizzle the remaining 1/2 cup wine over the top. Return to broiler about 4 - 5 minutes, or until cheese is melted and top is golden. Serves 3 - 4.
