Patty Cakes - Savory fried mashed potato cakes

Crispy, fried Mashed Potato Cakes embedded with scallions and peanuts.


Ingredients:

2 very large Idaho potatoes, peeled and chunked

1 1/2 cups cottage cheese

1 bunch scallions, sliced

1 teaspoon salt

1/2 teaspoon pepper

1/3 cup finely chopped peanuts

1/2 cup fine, dry bread crumbs

Vegetable oil for frying

Tomato slices


Recipe:

Steam or boil potatos until very tender.  Drain and place in a large bowl.  Mash with the back of a fork or large spoon.  Stir in cottage cheese, scallions, salt and pepper and peanuts.  Form 6 - 8 patties with your hands.  

Heat about 1/2" oil in a large skillet.  Fry in batches if needed so they don't touch, browning on both sides.  Drain on paper towels and serve warm with a slice of tomato.  Makes 6 - 8 hamburger-sized patties.
