Tasty little nuggets of breaded alligator to impress your friends.
1 pound alligator tail meat
1/2 cup whole milk
1/3 cup flour
1/2 cup dry, plain bread crumbs
1/3 cup grated Parmesan cheese
1/2 teaspoon granulated garlic
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
Vegetable oil for frying
Cut alligator meat into 1/2" pieces. Place in medium bowl and pour milk over. Refrigerate one hour, stirring occasionally.
In another medium bowl, combine flour, bread crumbs, cheese, oregano, salt and cayenne.
Heat about 1/2" of vegetable oil in a large skillet. Dip alligator pieces in flour mixture and fry until golden brown, turning occasionally. This will take 5 - 6 minutes. With a slotted spoon, transfer to a paper-towel lined bowl to drain. Remove paper towel and serve warm. Serves 4 as an appetizer.
