Chinese Fortune Shrimp Cocktail

A unique and fun way to serve shrimp cocktail (with an Asian mustard-soy dipping sauce).


Ingredients:

l pound large shrimp (uncooked)

2 tablespoons butter

3 tablespoons good brown mustard

2 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon brown sugar


Recipe:

On long strips of paper, write out your own fortunes, one for each piece of shrimp - they can be funny or romantic, depending on who you'll be serving them to. (One pound of large shrimp is generally 12 - 14 pieces).  Fold them into small pieces and wrap in tin foil.

Peel, clean and devein shrimp.  Melt butter in a medium skillet and cook shrimp, stirring, just until they turn pink.  Allow to cool.

Make dipping sauce:  In a small bowl, combine mustard, garlic, soy sauce and brown sugar.

Slice shrimp along the backside, but not all the way through.  Stuff each with your wrapped fortune and serve with mustard sauce for dipping.  Serves about 4.  Note:  The dipping sauce is enough for 2 pounds of shrimp.
